Semillon may be the major white grape of the Bordeaux
region, but it is most often used as a blending grape. It is round, opulent,
and rich in the mouth, and a balancing complement to the acidic and aggressive
Sauvignon Blanc grape. On its own, Semillon exhibits complex aromas with notes
of honey, pear, mango, and apricot. While Semillon has been criticized for
lacking character, it benefits greatly from aging. In Australia, where Semillon
is featured as a dry white wine, the Hunter Valley offerings are rather neutral
and pleasantly acidic. However, after several years in the bottle, the wines
emerge with a weightier, honeyed, toasty character. Dry Semillon is a good
match for clams, mussels, sole, and pan-fried fish.
Semillon can be drunk young for its fresher flavors, or
allowed to age so the mellower flavors come through. At WAREHOUSE
